Australian bakery franchise Bakers Delight is entering the country’s growing gourmet sandwich market with its first-ever pop-up deli in Melbourne. The new concept marks a significant departure from its traditional bakery operations after more than 45 years, as the company introduces its Everything Sourdough range and explores changing consumer preferences.
Bakers Delight Opens First Pop-Up Deli in Melbourne
The bakery chain will launch its limited-time Bakers Deli concept at 316 Smith Street in Collingwood on Saturday, 17 October, and Sunday, 18 October 2026.
Operating from 9am to 2pm each day, or until products sell out, the pop-up will offer a specially developed menu featuring gourmet sandwiches and bakery-inspired beverages.
The initiative coincides with the national release of Bakers Delight’s Everything Sourdough range, which became available in bakeries across Australia on 15 October.
Developed in collaboration with Australian spice company Mingle Seasoning, the new sourdough products feature a blend of sesame seeds, garlic, onion and sea salt.
The collaboration reflects the bakery chain’s efforts to introduce new flavours while responding to growing consumer interest in artisan-style bread and premium sandwich options.
New Gourmet Sandwiches and Bakery-Inspired Drinks
The Bakers Deli menu will feature five specially created sandwiches highlighting the versatility of the Everything Sourdough range.
Among the featured options is The Everything Reuben, combining pastrami, sauerkraut, Swiss cheese and special sauce in an Everything Sourdough Baguette.
Another offering, The Cheesymite Remix, reinterprets the company’s well-known Cheesymite Scroll as a gourmet sandwich.
The pop-up will also serve drinks inspired by familiar Australian bakery favourites, including finger bun iced lattes and iced matchas finished with colourful sprinkles.
To mark the launch, the first 100 customers on each day will receive a complimentary merchandise goodie bag.
Changing Australian Food Trends Drive Bakers Delight’s Expansion
Bakers Delight Chief Marketing Officer Jodi Murray-Freedman said the new deli concept reflects the changing role of sourdough and premium sandwiches in Australian food culture.
“After more than 45 years of baking for Australians, we’re doing something completely new with our first-ever sandwich deli,” she said.
“Sourdough and gourmet sandwiches are a huge part of how Australians eat today, and Bakers Deli is our way of celebrating our new Everything Sourdough range with a fun, delicious experience.“
The launch comes as gourmet sandwich shops become increasingly prominent in major Australian cities, particularly Melbourne and Sydney.
Once associated primarily with convenient lunches, sandwiches are increasingly being presented as premium café meals featuring artisan bread, carefully prepared fillings and international culinary influences.
Gourmet Sandwich Culture Gains Momentum
Dedicated sandwich bars have attracted growing attention through elaborate combinations of ingredients and traditional deli preparation methods.
Popular styles include Italian schiacciata filled with mortadella and stracciatella, slow-cooked beef birria sandwiches served with dipping sauces, and generously filled Reubens prepared using sourdough bread.
Melbourne’s established café culture has helped support demand for these offerings, while similar businesses have expanded across Sydney and other urban markets.
For established bakery operators, the trend presents opportunities to introduce products that combine traditional breadmaking with contemporary dining preferences.
Bakers Delight’s temporary deli provides a platform to showcase its new sourdough range through prepared sandwiches rather than relying solely on conventional bakery purchases.
Bakers Delight Introduces Smaller Metro Stores Across Australia
The Melbourne pop-up follows several changes to Bakers Delight’s retail strategy as the company explores new formats and expansion opportunities.
One significant development is the introduction of a compact metro store model designed to operate within smaller retail spaces.
A trial of the format is underway in Camberwell, Victoria, as part of the company’s broader national expansion strategy.
The smaller stores are intended to complement existing traditional bakeries while potentially reducing establishment costs and allowing the franchise network to enter locations where larger outlets may be less practical.
Bakers Delight has also continued expanding its conventional retail presence, with a new traditional-format bakery opening at Nedlands Square in Western Australia last week.
Compact Store Model Aims to Support Franchise Growth
Bakers Delight Joint CEO David Christie described the smaller store format as a “game-changer for our network”.
“It’s a lower-cost, high-efficiency format that delivers strong return on investment and opens the door to new locations and franchise opportunities,” he said.
“The smaller, more affordable store design will allow for more franchise opportunities at a faster pace.”
The company plans to operate its compact metro stores alongside its established bakery outlets rather than replace the traditional format.
This approach would allow Bakers Delight to explore different retail environments while maintaining its existing bakery operations.
A New Direction for an Established Australian Bakery Brand
The launch of Bakers Deli and the introduction of smaller stores demonstrate how Bakers Delight is adapting its operations to changing consumer habits and retail conditions.
While the Collingwood deli is scheduled to operate for just two days, it represents a new approach to presenting the company’s bakery products within Australia’s expanding gourmet sandwich market.
Together with the national Everything Sourdough launch and ongoing metro store trial, the initiative highlights Bakers Delight’s efforts to diversify its offerings while retaining its established position in Australia’s bakery sector.
